Not interchangeable with leaf

Dried epazote keeps some of the resin and loses the sharpness that makes the fresh herb distinctive, and the loss is disproportionate. It is usable in a long-simmered pot at roughly a third the volume, and it is not a substitute in a quesadilla or a raw salsa. Where neither is available, the honest advice is to accept the dish will be different rather than to reach for coriander.

Not a substitute so much as the nearest thing in the same cuisine. Both are resinous herbs that survive a long simmer and both belong in a Mexican bean pot, and there the resemblance ends: epazote is camphorous and faintly petroleum-like, Mexican oregano citric and medicinal. A pot of beans made with oregano instead is a good pot of beans without the specific savoury depth epazote gives.

Why there is no second option: There is no second option, and there is barely a first. Epazote's character comes from ascaridole, a compound found in almost nothing else that is eaten, and four hundred years of Mexican cooking has not produced an analogue. Mexican oregano is here because it is the nearest thing that belongs in the same pot, not because it resembles epazote. Quality is not the same as safety

Stale dried epazote is a quality matter. Fresh epazote is a raw leaf and spoils like one.

Epazote is one of the seasonings of Mesoamerica that survived the Columbian Exchange in place rather than travelling: it was in use in central Mexico long before contact, it is named in the Nahuatl record, and it never became a European spice despite being a vigorous weed across Europe within a century. The reason is straightforward — it does not dry well, and a herb that cannot be dried could not be traded in the sixteenth century.

That is a statement about a distilled oil taken as a medicine.
