Fresh epazote

Not interchangeable with leaf
Dried epazote keeps some of the resin and loses the sharpness that makes the fresh herb distinctive, and the loss is disproportionate. It is usable in a long-simmered pot at roughly a third the volume, and it is not a substitute in a quesadilla or a raw salsa. Where neither is available, the honest advice is to accept the dish will be different rather than to reach for coriander.

Sharp, medicinal and slightly numbing, with a bitterness underneath. Used at the quantity Mexican cooking uses it — a sprig in a pot, not a handful — it does not taste of any of that in the finished dish. It reads instead as a savoury depth that makes beans taste cooked rather than merely boiled.
Powerful, resinous and camphorous, with a note people variously describe as petrol, turpentine, creosote or savory-gone-wrong. It is genuinely unlike anything else in this catalogue, and the Nahuatl name is not being polite about it.

Hoja santa

Epazote is sharp, medicinal and used by the sprig in beans and quesadillas; hoja santa is broad, anise-and-mint, and used as a wrapper or torn into a sauce. A pot of beans made with oregano instead is a good pot of beans without the specific savoury depth epazote gives.

Why there is no second option: There is no second option, and there is barely a first. Epazote's character comes from ascaridole, a compound found in almost nothing else that is eaten, and four hundred years of Mexican cooking has not produced an analogue. Mexican oregano is here because it is the nearest thing that belongs in the same pot, not because it resembles epazote. Hoja santa and avocado leaf were considered and rejected: both are aromatic Mexican leaves and neither is camphorous. The honest alternative to epazote is omitting it. Editorial judgement.
Epazote has no close substitute and grows like the weed it is. A windowsill plant solves this problem permanently for anyone who cooks Mexican food often.

Quality is not the same as safety
Stale dried epazote is a quality matter. Fresh epazote is a raw leaf and spoils like one.
Buying and quality
Grow it if you can and buy it fresh if you cannot. Epazote is among the easiest plants in this catalogue to raise — it is genuinely a weed — and the gap between fresh and dried is large enough that a windowsill plant is a better investment than a jar. Dried epazote earns a place in a bean pot and nowhere else.

Long known as Chenopodium ambrosioides and still sold under that name. The genus was split in 2002 and the older binomial remains in wide use, so both will be encountered.
Amaranthaceae
The amaranth family, which also holds quinoa, spinach and beetroot — not a relative of any other herb in this catalogue.

An annual or short-lived perennial to about a metre, with toothed, pointed leaves and dense spikes of tiny green flowers. It is a vigorous weed across much of the warm world, which is the practical reason it has never been an expensive spice anywhere.

The distilled oil of the same plant was a commercial anthelmintic drug into the twentieth century and is toxic in the quantities used medicinally. It is not the herb, and nothing on this profile concerns it.
Occasionally offered as a substitute on the grounds that both are pungent green Mexican herbs. They taste nothing alike — epazote is resinous, camphorous and faintly petroleum-like; coriander is citric — and a pot of beans that wanted epazote is not saved by coriander.
Where it comes from and how it is made
Central and southern Mexico, with a range extending through Central America and into South America before European contact.

- United States — notable producer. Grown commercially for the Mexican-American market, and naturalised as a weed across much of the country.
Leaves and soft stems picked young, before flowering, when the aroma is at its most resinous and least harsh.

Epazote is a vigorous weed and a plant left to itself becomes woody and increasingly harsh.Why: Ascaridole, the compound responsible for both the flavour and the toxicity concerns, is more concentrated in older plants and in the seed than in young leaf.
- Using fresh and local — The great majority of epazote is used within a day of cutting, from a garden or a local market, and it is one of the few herbs in this catalogue with essentially no international fresh trade.
- Air-drying in bunches — Where it is dried, bunches are hung in shade rather than sun-dried, and the dried herb is used in bean pots where its remaining flavour is enough.Why: Shade rather than sun because ascaridole is unstable to heat and light. Even so the dried product keeps a fraction of the aroma and gains a hay-like flatness.
Grown as an annual and cut through the season. Much of what is used domestically in Mexico is gathered rather than sown.
Warm and tolerant of poor ground. Epazote naturalises readily and is treated as an invasive weed in several countries that do not eat it.
History and trade
Epazote is one of the seasonings of Mesoamerica that survived the Columbian Exchange in place rather than travelling: it was in use in central Mexico long before contact, it is named in the Nahuatl record, and it never became a European spice despite being a vigorous weed across Europe within a century. The reason is straightforward — it does not dry well, and a herb that cannot be dried could not be traded in the sixteenth century.
Essentially untraded internationally. Epazote reaches markets outside Mexico and Central America chiefly through diaspora supply chains and specialist growers.

This is the reason most often given for putting epazote in a bean pot, in Mexico and in every English-language source that mentions the herb. It is a long-standing and widely held traditional belief, and SpiceHQ holds no clinical evidence for it at all. The herb is in the pot; whether it does what the tradition says is unestablished, and the flavour it contributes is reason enough on its own.

Epazote is the herb of the bean pot — black beans above all — and of quesadillas with squash blossom or huitlacoche, of mushroom dishes, of soups and of some green salsas. Its use is concentrated in central and southern Mexico and is much less common in the north, which is one reason Tex-Mex cooking has no equivalent.

Epazote oil is a drug and the herb is not

Ascaridole, the dominant compound in epazote, was the active principle of chenopodium oil, a commercial anthelmintic used into the twentieth century and abandoned partly because its therapeutic and toxic doses are uncomfortably close. That is a statement about a distilled oil taken as a medicine. It is not a statement about a sprig of the herb in a pot of beans, and SpiceHQ records the distinction rather than importing a hazard from the one to the other. The essential oil is not a culinary product.
Not among the substances that must be declared as allergens under EU Regulation 1169/2011 Annex II or under the United States major food allergen rules. That is a statement about labelling law and not about whether allergy occurs: allergic reactions to spices are documented in the clinical literature and are simply not a labelling category. Where a ground spice presents an allergen risk it is usually through adulteration or shared processing equipment rather than through the plant itself.
