A substitute that disappears into a long braise can be obvious sprinkled on at the end, and one that matches the flavour may lose the colour the dish depends on. Choose what you are replacing, what you are cooking and what the replacement must keep, and this narrows the recorded substitutions to the ones that hold up.

How options are sorted
Only what each recorded substitution states is used.
Options recorded as working for your kind of cooking come first, then those recorded as partly working, then by how much of what you asked to keep they are recorded as keeping, and then by their overall suitability. An option with nothing recorded for your kind of cooking is listed separately rather than assumed to work. One recorded as failing there, or as losing something you asked to keep, is set aside with that reason. A recorded fit comes from a dish the substitution names, so it speaks for dishes like that one rather than for every dish of the kind; the substitutes pages give the dish and the reason. Swaps recorded as not recommended are never offered. Nothing is inferred from shared aroma compounds.
