How this works

Every substitution here states where it works and where it does not. That second part is the useful half: a ratio on its own is what leads people to put cayenne in a goulash. Ratios are given only where they are defensible, and always with their basis, because a teaspoon of one spice does not weigh the same as a teaspoon of another.

Substitutions to avoid

Recorded deliberately. These are all commonly suggested elsewhere, and each of them ruins a dish in a specific and predictable way.
