What to use instead of korarima

Quick answer

The closest option is Grains of paradise, rated good. The better of the two options and the less obvious one, because these are the same genus: korarima is Aframomum corrorima and grains of paradise is Aframomum melegueta, both African members of the ginger family and neither of them a true cardamom. They share a camphorous, resinous warmth that Elettaria cardamom does not have. What grains of paradise adds is a genuine peppery bite from paradol, and what it lacks is korarima’s faint smokiness.

It will not do for: Dishes relying on korarima’s smoky note, which grains of paradise does not have; Ethiopian coffee ceremonies using the whole pod.

Ranked by suitability. Ratios are given only where they are defensible, and always with their basis — by weight or by volume — because spice densities differ.

Use: ~1× by volumeVolume for volume. Grains of paradise are more peppery, so taste before adding the last quarter.

Works for

  • Berbere and mitmita made at home
  • Ethiopian stews and spiced butters
  • Anywhere the resinous warmth rather than the smoke is what is wanted

Does not work for

  • Dishes relying on korarima’s smoky note, which grains of paradise does not have
  • Ethiopian coffee ceremonies using the whole pod

Substituting within Aframomum is a far better answer than reaching for either cardamom, and the relationship is invisible unless you know the botany — which is most of why this record exists.

Use: ~0.75× by volumeThree quarters black cardamom with a quarter green, which brings back some of the sweetness black cardamom alone lacks.

Three genera of the ginger family standing in for each other, which is as close as this gets. Korarima is Aframomum corrorima, Ethiopian rather than Indian, and it is camphorous and slightly smoky with a resinous edge neither cardamom has. Black cardamom supplies the smoke, green cardamom the sweetness, and between them they approximate a spice that is not really between them.

Works for

  • Berbere and mitmita made at home, where korarima is one of many components
  • Ethiopian stews, where the aromatic sits under a great deal of chilli

Does not work for

  • Anywhere korarima is the identifying aroma, such as a simple wot
  • Ethiopian coffee preparations that use the pod whole

Cuisine: Korarima is what makes Ethiopian spice mixtures taste Ethiopian rather than generically hot. Substituting it produces a good chilli mixture that could come from anywhere.

Sold as Ethiopian cardamom or false cardamom in East African and Middle Eastern shops. Worth seeking out rather than approximating.
