Why there is no second option: Galangal is the only rhizome close enough to be worth naming, and it is not close. Kencur is Kaempferia galanga and carries ethyl cinnamate, which gives it a camphorous, faintly medicinal edge that neither galangal nor ginger has. Ginger was considered as the more available option and rejected as further away than galangal, not nearer: it replaces the pungency and none of the camphor, which is the part the dish was built on.
