What to use instead of green cardamom

Quick answer

The closest option is Green cardamom, rated good. The seed is where essentially all the aroma is, and the husk is a container. Loose seed is therefore a much closer substitute for a whole pod than ground cardamom is, and the loss is one of keeping rather than of flavour: an intact pod protects its terpenes and a loose seed does not, so bought seed is usually flatter than seed you crack yourself.

It will not do for: Rice dishes and pilafs where whole pods are part of the presentation; Long storage — loose seed fades far faster than the pod.

Green cardamom

Good match

Use: ~0.3× by volume — Roughly a third of a teaspoon of loose seed per pod — six to ten seeds, depending on pod size and grade.

Works for

  • Anything ground or blended
  • Baking
  • Infusions where the pod would have been strained out anyway

Does not work for

  • Rice dishes and pilafs where whole pods are part of the presentation
  • Long storage — loose seed fades far faster than the pod

The better move is nearly always to buy pods and crack them, which takes seconds and is the difference between cardamom and the memory of it.

Green cardamom

Acceptable

Use: ~0.2× by volume — Roughly a fifth of a teaspoon of ground cardamom per pod — about a sixth to a quarter, depending on pod size. The pod husk contributes little aroma and considerable volume, which is why the conversion is so unintuitive.

A real loss, and a larger one than for most spices. Cardamom’s aroma is dominated by highly volatile terpenes held inside an intact pod, and grinding starts a decline that is well advanced within weeks. Shop-bought ground cardamom is frequently much flatter than the pods it came from, and often contains ground husk as bulk. Where the pod would have been bruised, added whole and fished out, the ground spice cannot be removed and will make the dish gritty.

Works for

  • Baking and doughs, where the spice must disperse
  • Spice blends
  • Anything where the pod could not be retrieved anyway

Does not work for

  • Rice dishes, biryani and pilafs, where whole pods are removed or eaten around
  • Coffee and infusions, where the pod is steeped and lifted out
  • Anything wanting cardamom’s top notes, which are the first thing grinding costs

The better answer to "what can I use instead of cardamom pods" is usually to buy pods and crush them, which takes ten seconds and is the difference between a spice and a memory of one.

Cinnamon (Ceylon) with Cloves

Situational

Use: 1× by volume — Roughly equal total volume, weighted heavily towards cinnamon — perhaps four parts cinnamon to one of cloves. Cloves are powerful and will take over.

You get warmth and sweetness in the same general family, but nothing supplies cardamom's cool, eucalyptus-like lift. The result is heavier and more one-directional.

Works for

  • Baking, where warm sweet spicing is the goal
  • Mixed masalas where cardamom is one component among several

Does not work for

  • Cardamom coffee or masala chai, where the cardamom is the entire character
  • Scandinavian cardamom buns
  • Any Persian or Mughlai dish built on cardamom and saffron together

Black cardamom is not a substitute for green: it is smoky and camphorous and will make a sweet dish taste of barbecue.
