What spices go with mushrooms

Quick answer

Garlic, Black pepper, Nutmeg, Sichuan pepper, MSG — in roughly that order of how well established each combination is.

Each is explained below, with the cuisines it belongs to and the point at which it stops working.

Why mushrooms behaves as it does

Mushrooms are the rare ingredient in this dataset that arrives already savoury, so the usual job of spice — adding depth to something bland — is largely done. What they want instead is contrast and lift: pepper, thyme, garlic, a little nutmeg in cream. Heavy warm spicing tends to muddy them, because two kinds of savoury depth do not add up to twice as much.

Classic

Long-established in at least one cuisine — the combinations you can rely on.

Garlic

Classic

Both are savoury in the same direction, which is unusual for a pairing that works — most good pairings contrast. Mushrooms carry glutamates and garlic carries sulphur compounds that read as depth once cooked, and together they give a dish more savouriness than the sum of the two. It is why a mushroom dish without garlic tastes underseasoned even when it is not.

How: Added after the mushrooms have released and reabsorbed their water; With butter and parsley as a finish

Add alongside: Thyme, Parsley, Black pepper

  • Added too early, the garlic burns while the mushrooms are still giving up water.

Mushrooms arrive savoury, so what they want is contrast rather than depth. Black pepper supplies pungency and a resinous top note without adding another layer of the same thing — which is why the pairing is nearly universal and why heavier spicing muddies mushrooms.

Add alongside: Garlic, Thyme, Nutmeg

Strong

Nutmeg

Strong

Specifically for mushrooms in cream — duxelles, mushroom soup, a mushroom gratin. The same principle as nutmeg with dairy generally: it lifts the fat. Against grilled or fried mushrooms with no cream it has much less to do.

Add alongside: Black pepper, Thyme, Garlic

  • A rasp only, and only where there is dairy. On a dry-fried mushroom it reads as odd.

The Sichuan treatment, and a genuinely different idea from the European one: rather than contrasting with the savoury depth, the numbness changes how it is perceived, making a plate of mushrooms feel livelier without adding heat.

MSG

Strong

Both bring glutamate, and putting them together is one of the few places where the effect is more than additive: mushrooms also carry nucleotides, and glutamate with nucleotides produces a savouriness disproportionate to either alone. It is the same principle behind kombu with bonito in dashi, and it is why a mushroom soup takes a very small amount of MSG and reads as though it had been made with far better stock.

How: A pinch dissolved into a mushroom soup or gravy; In a seasoning for roasted or fried mushrooms

Add alongside: Black pepper, Garlic

  • Very little is needed here — the interaction means the usual quantity will overshoot and turn metallic.

Good

Mushrooms are earthy and slightly sweet and take sharp aromatics well. In a Thai hot-and-sour soup the galangal and the mushroom do opposite jobs and the dish needs both.

How: In a hot-and-sour mushroom soup; Sliced into a braise

Add alongside: Lemongrass, White pepper, Chilli flakes

Cuts and forms

Button and chestnut, Field and portobello, Wild, Dried. These do not all take the same spicing — the notes above flag where the difference matters.
