Forms
Where the forms of a spice differ enough to need separate answers, they get them. Most spices do not appear here; these do because treating their forms as interchangeable produces a dish that is wrong.
Fine or table salt
Vacuum-evaporated, very pure, uniform small cubes, usually with an anti-caking agent and often iodised. Dissolves almost instantly and packs densely in a spoon.
Cleanly and straightforwardly salty. Iodised salt carries a faint metallic note that some people detect and most do not.
Use where the salt must dissolve and disappear: doughs, batters, brines, baking. Measure it by weight rather than by volume if the recipe matters, because a teaspoon of fine salt holds far more salt than a teaspoon of flakes.
Not interchangeable with flakes or cracked
Not interchangeable by volume with any coarser salt, and the error runs in the dangerous direction: substituting fine salt spoon for spoon where a recipe means kosher or flaked can nearly double the salt in the dish. By weight they are interchangeable exactly, which is why serious baking recipes give salt in grams.
Flaked salt
Open-pan evaporated into hollow pyramidal crystals. Bought entirely for texture — it is a finishing salt and is wasted anywhere it will dissolve out of sight.
Indistinguishable from any other salt in solution. What differs is the delivery: a flake dissolves on the tongue in a burst rather than uniformly, which reads as a brighter, less relentless saltiness.
Scattered by hand onto finished food, where the crunch and the burst are the point. Putting it in the pasta water is burning money.
Not interchangeable with ground
Interchangeable with any other salt by weight and emphatically not by volume — flaked salt is far less dense, so a spoonful holds much less salt. Its whole value is textural and it survives none of the applications where the salt dissolves.
Kosher or coarse salt
Irregular coarse crystals, generally without additives. The cooking salt of most professional kitchens, chosen because a pinch is visible, controllable and forgiving.
The same taste as every other salt. The reason it is preferred is control rather than flavour: a coarse crystal is easy to see, easy to pinch and slow enough to dissolve that oversalting is harder.
Pinched and scattered by hand for seasoning during cooking, and used for dry-brining meat, where the coarse crystal dissolves slowly enough to draw moisture and reabsorb it rather than sitting on the surface.
Not interchangeable with ground
Two widely sold kosher salts differ from each other in density by roughly a factor of two, so even "kosher salt" is not a single measure by volume. Anywhere the quantity matters, weigh it.

Flavour and aroma
Salty, and that is the whole of it — one of the basic tastes, detected by dedicated receptors rather than by the olfactory route that carries every other seasoning in this dataset. What salt mainly does in food is not taste of itself: it suppresses bitterness, sharpens sweetness and acidity, and makes aroma compounds more perceptible, so a properly salted dish tastes more like itself rather than tasting salty.
White in almost every form. Rock salts carry mineral tints — the pink of Himalayan salt is iron oxide, the grey of sel gris is clay from the pond floor — at concentrations that colour the crystal and do not reach the tongue.
The property that actually distinguishes the products. Fine vacuum salt is dense, dissolves instantly and disappears; kosher salt is coarse, irregular and easy to pinch and scatter; flaked salt is a hollow pyramid that crushes between the fingers and gives a distinct crunch on the surface of food; coarse rock salt dissolves slowly enough to be useless as a finishing salt and ideal in a grinder or a brine.

ClassicSalt does two separate things to a tomato and both are worth knowing. It draws water out osmotically, which concentrates what is left and is why salted tomatoes sit in their own juice; and it sharpens the perception of the acidity and sweetness already there, which is why an unsalted tomato tastes flat even when it is ripe. - Salting a sauce before it reduces is the commonest way to oversalt one. Salt does not evaporate, so the seasoning concentrates in exact proportion to the water lost.
Dark chocolate
StrongThe clearest demonstration of what salt actually does. Sodium suppresses the perception of bitterness, so a little salt on dark chocolate does not make it taste salty — it makes it taste less bitter and correspondingly more of cocoa and fruit. The same mechanism is why salt is added to coffee, to bitter greens and to over-reduced sauces, and it is the reason salted caramel works rather than a matter of fashion.

MSG
SituationalReplaces part of what salt does and none of the rest. MSG makes a dish taste more savoury and carries about twelve per cent sodium by weight against salt's thirty-nine, so swapping some of the salt for it genuinely lowers sodium while keeping the dish tasting seasoned. What it cannot do is the rest of salt's work: it does not suppress bitterness, does not sharpen acidity or sweetness, and does nothing physical at all. A dish seasoned with MSG alone tastes savoury and oddly flat.

Preparation and use
Season in layers and weigh it when it matters. Salt added early has time to distribute and to do its physical work, and unlike every aromatic in this dataset it cannot be driven off or degraded by heat — so a sauce that reduces becomes saltier in exact proportion to what evaporates, and salting to taste before reducing is the commonest way to ruin one. Salt meat well ahead rather than at the pan: a coarse salt applied an hour or more before cooking draws moisture out and is reabsorbed as brine, which seasons throughout instead of only on the surface. The one thing that genuinely cannot be done by volume is substituting one salt for another, because fine, kosher and flaked salts differ in density by up to a factor of two; by weight they are identical. Finishing salt goes on at the end and off the heat, where the crystal survives to be felt.
Everything, which is why it is worth being precise about what it does. Salt seasons — supplying the salty taste directly — but most of its work in a dish is indirect: it suppresses bitterness, sharpens perceived sweetness and acidity, and makes aroma compounds more volatile and so more perceptible, which is why an underseasoned dish tastes flat rather than tasting unsalty. It also does physical work no other seasoning does: drawing water from vegetables, dissolving muscle proteins in a brine so meat holds moisture, controlling fermentation in pickles and kraut, and strengthening gluten in bread dough. It works with every food and every other seasoning in this dataset without exception.
- boiling — Nothing happens to the salt. It is thermally stable at any cooking temperature, does not evaporate and cannot be driven off, so salt added early stays in the dish and a reduced sauce becomes saltier in exact proportion to what has boiled away. This is the single most consequential fact about cooking with it.
- grinding — Changes dissolution rate and nothing else. A grinder on coarse rock salt produces the same compound as the fine salt in the box, which is why a salt grinder is a serving object rather than a flavour decision — unlike a pepper grinder, where the grinding genuinely releases volatiles.

There is not one, and the absence is the answer rather than an omission. Salt does not go stale, fade or weaken, so an open box tastes exactly as it did when it was bought. If it has clumped it has taken up water; break it up and use it.

Quality is not the same as safety
Neither category really applies, which makes salt the only entry in this dataset where the honest storage advice is that there is nothing to worry about. It does not spoil, does not support microbial growth — it is used to prevent it — and does not lose its effect. A caked box is inconvenient and unchanged.
Buying and quality
The whole-versus-ground question maps onto fine-versus-coarse here, and unusually the answer is to own both rather than to choose. They are the same compound and they are not interchangeable by volume — a teaspoon of fine salt can hold nearly twice the salt of a teaspoon of flakes — so the practical rule is to weigh salt anywhere the quantity matters and to reach for the crystal that suits the job otherwise. A salt grinder is the one piece of equipment here that does nothing: grinding coarse salt produces fine salt, and the box already contained some.

- Solar evaporation — Seawater or brine is fed through a series of shallow ponds and left to concentrate in sun and wind until sodium chloride crystallises out and is raked off. Other minerals crystallise at different concentrations, so which pond the salt is taken from determines what else is in it.Why: The oldest route and the one that produces sea salt, fleur de sel and most Indian and Mediterranean salt.
- Rock salt mining — Deposits left by seas that dried out over geological time are cut or drilled from underground seams, then crushed and screened. Himalayan pink salt is mined rock salt from a Punjabi deposit; its colour is iron oxide.Why: Bulk supply. Most mined salt is used for de-icing and industry rather than for food.
- Vacuum evaporation — Brine is pumped from a deposit and boiled under reduced pressure, giving very pure, uniform, fine cubic crystals. This is what ordinary table salt is.Why: Purity and consistency, at the cost of any crystal character.
- Additives — Anti-caking agents are commonly added to fine salt, and iodine is added in many countries under public-health programmes. Neither is present in most flaked or coarse salts, which is one of the few compositional differences between the products that is real.Why: Free flow and, in the case of iodine, a deliberate public-health measure rather than a culinary one.
Graded on crystal size, purity and additive content rather than on anything sensory. Codex Alimentarius sets a compositional standard for food-grade salt covering minimum sodium chloride content and contaminant limits; nothing in it addresses flavour, because there is nothing to address.
The interesting integrity question about salt is not adulteration but marketing. The compound is the same in every product on the shelf, and the trace minerals that specialty salts are sold on are present in quantities far too small to taste — what is actually being bought is crystal size, shape and dissolution rate, which are real and worth paying for in the right application. Colour claims are the clearest case: the pink of Himalayan salt is iron oxide at a fraction of a per cent, and it is a geological fact rather than a culinary one.
Only solar evaporation depends on climate, and it depends on it absolutely: hot sun, low rainfall and reliable wind. That is why solar salt comes from places like Gujarat, the Mediterranean coast and Western Australia, and why northern European producers use open pans over heat instead.
History and trade
The only mineral in this dataset and the one with the largest history attached. Salt was a strategic commodity for most of recorded history because preservation depended on it: settlements formed around springs and pans, roads were built to move it, and states taxed it because everyone had to buy it. The Roman via Salaria carried salt to Rome; the French gabelle was a salt tax bitter enough to feature in the grievances of 1789; and the Indian salt tax made a monopoly on a substance freely available from the sea, which is precisely why Gandhi chose it for the 1930 march to Dandi. Refrigeration ended salt's strategic importance within a century and left it the cheapest thing in the kitchen.
Traded further and earlier than any spice, and for a completely different reason: not scarcity or aroma but preservation. Saharan caravan routes moved salt south to trade against gold, and the exchange rates recorded for those routes are the origin of a good deal of loose talk about salt being worth its weight in gold. Modern salt trade is industrial — the large majority of world production is used for chemicals and de-icing, and food salt is a small fraction of the tonnage.

The etymology is genuine — salarium derives from sal — and the payment is not. There is no good evidence that Roman soldiers received salt as wages; the likeliest reading is an allowance connected with salt, and even that is inferred. The vivid version has been repeated for so long that it appears in otherwise careful writing, and it is a good example of an etymology being mistaken for a historical account.

Food salts are 97 per cent or more sodium chloride whatever their origin, and the trace minerals in the remainder are present at concentrations far below any plausible taste threshold. The differences people reliably detect between salts are real and are textural: crystal size, shape and dissolution rate change how and when the saltiness arrives. That is a good reason to own more than one salt and a poor reason to believe the mineral story.
