Whole seed

Not interchangeable with powder

Whole seed dropped into a hot pan gives nuttiness; the same quantity as powder stirred into the same pan gives bitterness and a muddy texture, because the powder has no cell structure to protect it. Substituting between them changes both the flavour and the point of the step.

Mustard powder

Milled dehulled seed, usually a yellow-and-brown blend. Develops its heat within minutes of being wetted and loses it again within the hour.

How to use it:

Flavour:

Depends entirely on treatment. Wetted and left cool, it is sharply pungent — sinus heat rather than tongue heat. Heated in fat without water, the pungency never develops at all and the seed turns nutty and mild. The same seed produces two opposite results, and knowing which you want is the whole skill.

Aroma:

Situational

The same seed with its cell structure destroyed, which changes everything about how it behaves. Powder cannot be tempered — dropped into hot fat it burns rather than pops, and the nutty result the technique exists for never appears. In a cool wet mixture it is the better choice, because it reacts immediately where whole seed would need crushing first.

Decide which mustard you want before you start, because the two are mutually exclusive. For nutty and mild: drop whole seeds into hot fat, cover — they jump — and wait for the popping to slow. For pungent: crush or grind, add cool water, and wait ten minutes; add acid only after the heat has developed, since acid arrests the reaction and locks in whatever you have. Never use hot water for the second, and never expect heat from the first.

Quality is not the same as safety

Mustard that has lost its heat is a quality matter and remains perfectly edible — it simply no longer does the job. Kept dry it does not become unsafe with age.

Buying and quality

Whole or ground:

Buy whole seed, and buy powder as well if you make dressings or English mustard. They are not substitutes for one another. Whole seed keeps for years because its pungency has not been made yet — the precursors are stable in a way finished aroma compounds never are — while powder degrades in a specific, diagnosable way: it stops making heat. Grinding whole seed at home is easy, so the case for buying powder is convenience and the case for buying seed is that it will still work in three years.

Commonly confused with

  • Prepared mustard (the condiment)

    The most consequential confusion. Prepared mustard is seed ground with liquid, usually vinegar or wine, plus salt and often other seasonings. A recipe calling for mustard seed and a recipe calling for mustard are asking for different ingredients, and substituting the condiment for the seed brings acid, salt and water into a dish that expected none of them.

  • Mustard powder

    Milled seed with the hull removed and no liquid added — English mustard powder is typically a blend of yellow and brown. It behaves like the seed chemically but releases its pungency the moment it is wetted, which whole seed does not.

  • Nigella
