Good match

Close on heat and close enough on flavour, because neither chilli is chosen for flavour in the first place. What is lost is form rather than character: cayenne is usually sold ground, so it cannot be toasted, soaked into a sauce base, or fried whole and lifted out — and those three techniques are most of what a whole árbol is for.

Toast briefly and watch it, then decide whether the seeds stay. A few seconds on a dry pan deepens the aroma and a few seconds more ruins it — these pods are thin and scorch faster than the large chillies, and burnt chilli turns a whole sauce acrid. Most of the heat lives in the seeds and the pale placenta rather than in the flesh, so removing them cuts the burn substantially and is the normal way to use árbol when the aroma is wanted and the full heat is not. For heat without the chilli itself, fry whole pods in the cooking oil and lift them out. Look at the colour and bend a pod. A good árbol is bright glossy red and snaps; a dull brown pod that bends without breaking has been stored damp or long. Smell is a weaker test here than for most spices because there is little aroma even when fresh.

Quality is not the same as safety

Whole or ground:

Buy whole pods. The argument is technique rather than freshness: a whole árbol can be toasted, soaked and blended into a sauce, or fried in oil and lifted out to leave heat without pods, and a powder can do none of that. A tall plant with a notably woody stem — the source of the name — bearing slender pointed fruit five to eight centimetres long. It dries to a hard, glossy, bright red pod that keeps its colour unusually well, where most dried chillies darken towards brown or black.

  • Cayenne pepper

    The closest thing in most kitchens and a reasonable substitute in heat terms. Cayenne is usually sold ground and árbol whole, which is the practical difference: whole pods can be toasted, soaked and blended, or fried and lifted out, and a powder can do none of those.

  • Guajillo

    Constantly confused by eye, because both are slender, smooth and red. History and trade

Its modern history is largely commercial: it dries and travels well, holds its colour, and has become one of the most widely exported Mexican chillies, turning up in Asian and North American kitchens under its own name and under several others.
