Taste a pinch rather than smelling it. Amchoor is much quieter in the nose than on the tongue, so a smell test underreports it badly — fresh powder is sharply sour with a fruity edge, and old powder is sour and flat. Colour helps too: fawn is right, brown is old.

Quality is not the same as safety

Caked or faded amchoor is a quality matter. Kept dry it does not become unsafe; visible mould on dried slices stored damp is a reason to discard rather than to trim.

Buying and quality

Whole or ground:

Powder for most people, slices if you use it rarely. This is one of the few spices where the ground form is the sensible default — amchoor is used as a powder in nearly every dish that calls for it, and grinding hard dried slices is more trouble than it is worth for half a teaspoon. Buy a small jar, keep it genuinely dry, and expect to replace it within a year; the acidity lasts but the fruit character does not, and a caked jar is the usual end. If you cook with it two or three times a year, slices from a South Asian grocer are the better purchase.

    The other dry souring powder in this dataset and a genuine relative. Sumac is dark red, fruity and tannic; amchoor is pale fawn, sharper and more purely sour with a faint resinous note. They are not interchangeable by colour and only roughly by acidity.

  • Tamarind

    The souring agent of neighbouring cuisines, and wet where this is dry. Tamarind brings body, colour and sweetness alongside its acid; amchoor brings acid and almost nothing else, which is sometimes exactly what is wanted.
