Why cod behaves as it does
Lean white fish is the hardest common protein to spice well, for a physical reason: most spice aroma compounds are fat-soluble, and cod has almost no fat to dissolve them in or to carry them. So the seasoning has to arrive through an added fat — butter, oil, a cream sauce — or through an acid or a crust. It is also delicate enough to be overwhelmed by anything assertive, which is why the traditions that spice it heavily do so through a sauce rather than on the fish.

White pepper
ClassicThe classical pairing for white fish, and the reason is partly visual: black specks on a pale fillet or in a white sauce are a fault, and white pepper delivers the same piperine pungency invisibly. It also sits at the right level of assertiveness for a fish that almost anything else would bury.

Strong
Dill
StrongLean white fish has too little fat to carry a heavy aromatic, and dill is one of very few herbs light enough to season it without taking over. Northern European cooking pairs the two constantly, usually through butter or a cream sauce that supplies the fat the fish does not have.
How: In a butter or cream sauce over the fillet; Scattered over with lemon after cooking

Turmeric
StrongThe South Asian and Southeast Asian answer to the same problem, and a completely different one from the northern European route. Turmeric is bloomed in oil, which supplies the fat cod lacks, and it colours and seasons the surface rather than penetrating the flesh. Bengali and Sri Lankan fish cooking is built on this.
