Why there is no second option: A combination, and there is no single ingredient that does the job. Roasted wattleseed tastes of coffee, chocolate and hazelnut at once because roasting Acacia seed produces the same pyrazines roasting coffee beans does, so the substitution works by reassembling the effect from its parts. Chicory was considered and rejected: it supplies the roasted bitterness and none of the nuttiness, so it moves the result further from wattleseed rather than nearer. Editorial judgement.

Several species are used and the commercial product is not from one plant. Acacia victoriae supplies most of what is sold as wattleseed. The legume family — wattleseed is a pulse used as a spice, which is why its roasted flavour resembles coffee and cocoa rather than resembling any aromatic seed in this catalogue.
