The paste has already had its heat reduced by deveining and blanching. Substituting the same volume of blended fresh chilli produces a far hotter dish, and substituting rehydrated mirasol produces a darker, deeper, less fresh one. Scotch bonnet with Paprika

Situational

Use: ~0.25× by volumeA quarter of the volume in scotch bonnet, made up with paprika for colour and body. Rough, and the heat needs tasting rather than measuring — aji amarillo is a moderate chilli and scotch bonnet is not.

Both are Capsicum chinense, which is the reason this works at all: they share the fruity, almost tropical ester profile that separates that species from the cayenne-type chillies most kitchens have. What differs is scale — scotch bonnet is many times hotter — and colour, since aji amarillo is orange-yellow and the paprika is there to put that back. The result is recognisably in the same family and is not the same chilli.

Why there is no second option: The two chillies share a species, which no other available option does. Habanero is the same species again and is hotter still and less fruity; guajillo and cascabel were considered for the colour and are Capsicum annuum, with none of the tropical ester profile that makes aji amarillo recognisable. Commonly confused with

  • Habanero

    Both are orange and both are non-annuum, and there the resemblance stops. Habanero is C. chinense, several times hotter, and floral-fruity in a way that reads as tropical. Ají amarillo is moderate and reads as stone fruit. Substituting habanero into a Peruvian dish makes it inedible at the quantities the recipe assumes.

  • Guajillo

    The closest widely available dried chilli in heat and in fruitiness, and the usual substitute outside South America. Guajillo is redder, more tart and less floral, and it is a Mexican chilli — a dish made with it is recognisably not Peruvian.
