What spices go with paneer
Quick answer
Garam masala, Fenugreek leaf, Kashmiri chilli, Fenugreek, Turmeric — in roughly that order of how well established each combination is.
Each is explained below, with the cuisines it belongs to and the point at which it stops working.
Why paneer behaves as it does
Paneer is the opposite of halloumi: unsalted, mild and neutral, contributing texture and protein without any flavour to work against. It is therefore seasoned through the sauce rather than on the surface, and it takes the full weight of a South Asian masala without needing to be moderated. Because it does not melt, it can be fried, grilled or simmered without losing its shape, and because it is bland it needs the marinade to do everything — which is why tandoori paneer sits in its yoghurt and spice for hours.
Classic
Long-established in at least one cuisine — the combinations you can rely on.
Garam masala
ClassicPaneer is unsalted, mild and contributes nothing but texture, which means the masala is the dish. Garam masala goes in at the end of a paneer curry rather than the start — it is a finishing blend of already-toasted aromatics, and long cooking flattens it.
How: Stirred in at the end of a paneer curry; In a marinade with yoghurt for tandoori paneer
Add alongside: Turmeric, Cumin, Chilli flakes
Fenugreek leaf
ClassicMethi paneer and paneer makhani, and the reason is that both paneer and cream are bland and rich and something has to push back. Kasuri methi’s mild bitterness and maple-savoury depth is the only thing in a North Indian gravy doing that job, which is why its absence is so noticeable and so hard to name.
How: Crushed between the palms over the finished gravy; Cooked into a methi paneer
Add alongside: Garam masala, Kashmiri chilli, Ginger
- A little. Kasuri methi turns acrid in quantity, and an old packet contributes the bitterness without the maple.
Strong
Kashmiri chilli
StrongKashmiri chilli is bred for colour rather than heat, which is exactly what a pale, bland cheese in a red gravy needs. It gives the deep red of a paneer makhani or a tandoori marinade without making the dish inedible.
How: Bloomed in ghee at the start of a gravy; In a yoghurt marinade for tandoori paneer
Add alongside: Turmeric, Garam masala, Fenugreek
Fenugreek
StrongDried fenugreek leaf crushed over a paneer dish at the end is close to a signature of North Indian restaurant cooking, and the bitterness is the point: paneer and cream are both bland and rich, and fenugreek is the only thing in the masala that pushes back.
How: Crushed between the palms over the finished dish; In a paneer makhani or a methi paneer
Add alongside: Garam masala, Kashmiri chilli, Ginger
- A little goes a long way; fenugreek turns acrid in quantity.
Good
Turmeric
GoodThe base note of most paneer gravies, present for colour and a low earthiness rather than for a flavour anyone identifies. It goes into the oil at the beginning with the other ground spices and cooks out before the liquid goes in.
How: Bloomed in oil with the ground spices at the start
Add alongside: Cumin, Coriander seed, Kashmiri chilli
Cuts and forms
Fresh cubes, Fried, Grated. These do not all take the same spicing — the notes above flag where the difference matters.
