What spices go with crab

Quick answer

Cayenne pepper, Celery seed, Chilli flakes, Black pepper — in roughly that order of how well established each combination is.

Each is explained below, with the cuisines it belongs to and the point at which it stops working.

Why crab behaves as it does

Crab presents a genuine contradiction. The meat is delicate and sweet and almost anything drowns it, and yet the traditional preparations — a Maryland crab boil, a Singaporean chilli crab, a Cajun boil — are among the most heavily spiced dishes anywhere. The resolution is where the spice goes: in a boil the seasoning is in the water and the shell mediates it, so what reaches the meat is a fraction of what is in the pot. Spice applied directly to picked crabmeat has to be far gentler, and mostly amounts to pepper, cayenne, lemon and a herb.

Classic

Long-established in at least one cuisine — the combinations you can rely on.

The heat in a Maryland or Cajun crab boil, and the reason the strategy works is the shell: the seasoning is in the water and only a fraction of it reaches the meat. Cayenne applied directly to picked crabmeat at boil concentrations would bury it entirely.

How: In a boil with celery seed, mustard and bay; A small amount in a dressed crab or a crab cake

Add alongside: Celery seed, Mustard seed, Bay leaf

  • What works in a boil does not work on the picked meat. The shell is doing the moderating.

The spice that makes a crab boil taste like a crab boil, and the one people cannot name. Celery seed is bitter, green and intensely aromatic, and it supplies the savoury vegetal background that stops a boil being merely hot and salty.

How: In a crab boil with mustard, bay and cayenne; In a seasoning for crab cakes

Add alongside: Mustard seed, Bay leaf, Cayenne pepper

Singapore chilli crab, and the Chinese and Southeast Asian tradition of cooking crab hard in a sauce rather than boiling it. The sauce mediates rather than the shell, and the sweetness of the crab is met by an equally sweet chilli sauce rather than counterweighted.

How: Bloomed in oil for a chilli crab sauce; With garlic and ginger in a stir-fried crab

Add alongside: Ginger, Garlic, Sichuan pepper

Strong

Singaporean black pepper crab, and dressed crab across northern Europe. Pepper is one of very few assertive seasonings that does not compete with crab’s sweetness, because piperine is a pungency rather than an aroma and leaves the delicate volatiles alone.

How: Coarse-cracked in a butter sauce for black pepper crab; Over dressed crab with lemon

Add alongside: Lemon, Cayenne pepper, Parsley

Cuts and forms

White meat, Brown meat, Soft-shell, Whole boiled. These do not all take the same spicing — the notes above flag where the difference matters.
