What it does

Vanillin is the sweet, creamy, faintly woody smell that the word vanilla denotes, and it is genuinely dominant in cured vanilla pods. But it is not the whole of vanilla: a cured pod carries hundreds of minor aromatics that give real vanilla its depth, floral edge and slight rum-like character, and the difference between an extract and pure vanillin is exactly that supporting cast. Vanillin also appears wherever wood meets heat or time — it is a substantial part of what oak barrels contribute to spirits and wine, and of the smell of a toasted oak plank.

Vanillin is one of the more forgiving aroma compounds: it is soluble enough in both fat and water to extract into cream, custard, syrup and alcohol alike, and it is stable enough to survive baking, which is why vanilla works in almost every sweet application without special handling. The compounds that distinguish real vanilla from vanillin are far more fragile, which produces the practical rule cooks arrive at independently — in a long-baked cake the difference between extract and synthetic vanillin is small, and in an uncooked or barely warmed preparation like a panna cotta or an ice cream base it is obvious. The traditional treatment of splitting a pod and infusing it in warm dairy, then leaving the seeds in, extracts both the vanillin and the fragile fraction.
