What it does

Saffron works through three compounds acting on three different senses, which is unusual enough to be worth stating plainly. Crocin is a carotenoid that has been made water-soluble by attached sugars, and that single structural difference reverses every rule that applies to paprika and turmeric. Saffron is steeped in warm water, milk or stock rather than bloomed in fat, because fat extracts it poorly and liquid extracts it almost completely. Warm rather than boiling liquid is correct: it is enough to dissolve the crocin and to release the picrocrocin, while boiling drives off the safranal and takes the aroma with it. The traditional twenty-minute steep before the saffron goes into the dish is not superstition — it is the time the extraction actually needs, and saffron threads thrown directly into a paella at the end give colour to the threads and not to the rice. Crushing the threads first, or grinding them with a little salt or sugar as an abrasive, meaningfully increases yield from an expensive ingredient.

  • Curcumin

    Turmeric is the standard cheap adulterant and substitute for saffron, and the substitution fails on solubility before it fails on flavour: turmeric will not extract into the steeping liquid and saffron will not bloom in the fat. The colour is also wrong — flat yellow rather than orange-red.

  • Safflower

    Sold as saffron in several markets and unrelated. Safflower florets dye a liquid yellow and contribute nothing else; the deception is old enough to be named in medieval adulteration statutes.
