Sesquiterpenes are half again the size of the monoterpenes and are markedly less volatile as a result, which gives them a distinct role in a dish: they persist through cooking and through storage after the bright top notes have gone. This is why an old jar of black pepper still smells of something — woody and dull rather than nothing — and why the warm base of a long-simmered spiced braise survives when its freshness does not.
