Litsea berry vs Cubeb
The short answer
Peppercorn-sized fruits that look alike, and litsea is used as a cubeb substitute in Indonesia. Cubeb is a Piper, resinous and peppery with a cooling finish; litsea is a laurel and tastes of lemon and ginger. The swap works where "a warm aromatic berry" is wanted and nowhere that either flavour is the point.

| Litsea berry | Cubeb | |
|---|---|---|
| Botanical identity | Litsea cubeba (Lour.) Pers. | Piper cubeba L.f. |
| Part used | fruit | berry |
| Origin | Native from the eastern Himalayas through southern China, Taiwan and mainland South-East Asia to western Indonesia. | Java and Sumatra, and the species is essentially endemic to the Indonesian archipelago as a crop. Almost every historical reference to cubeb in Europe traces back to Javanese production. |
| Flavour notes | lemon, citrus, ginger, peppery, fresh | bitter, peppery, cooling, resinous, faintly medicinal |
| Heat | Scoville does not apply | Scoville does not apply |
| Flavour | Lemon and ginger with a light peppery warmth and a slight bitterness. | Mildly pungent, distinctly bitter, and finishing cool and slightly medicinal. The bitterness is the defining characteristic and the reason cubeb is used in small amounts within blends rather than as a table spice; the cooling finish is the reason it works in gin. |
| Aroma | Intensely lemony and fresh, with a sweet, fruity edge and none of the grassy note of lemongrass. | Peppery at first and then unexpectedly cool — a eucalyptus and pine note over a warm, resinous base, with something of allspice in it. It smells more complicated than black pepper and less appetising to most people on first encounter. |
Which should you buy?
Litsea berry
Whole, crushed at the moment of use. The aroma is citral, which is volatile, and a ground powder loses it quickly.
Cubeb
Whole, and unusually emphatically. Two separate reasons point the same way: the stalk is the only way to confirm the spice is cubeb rather than pepper or allspice sold as cubeb, and the aromatic fraction that makes cubeb interesting is the part that disappears from ground spice while the bitterness stays. Ground cubeb is therefore both unverifiable and, after a few months, simply bitter.
