Forms

Where the forms of a spice differ enough to need separate answers, they get them. Most spices do not appear here; these do because treating their forms as interchangeable produces a dish that is wrong.

Fresh rhizome

The whole green rhizome, grated to order. The only form with the sweetness and the green note, and the only one that is unambiguously the plant.

Flavour:

Sharp and immediately nasal, then distinctly sweet, with a clean green finish. Markedly less coarse than horseradish and quite unlike the tube product.

Fresh brassica leaf with a mustard edge, developing only after grating.

How to use it:

Trim the knobbly skin from the top of the crown, grate in small circles on a fine grater — sharkskin traditionally, a fine ceramic or microplane otherwise — and let the paste stand a minute or two for the pungency to develop fully. Grate only what will be eaten within about a quarter of an hour, and grate from the crown end, which is sweeter and stronger; the tail is milder. Keep the unused rhizome whole.

Not interchangeable with paste or powder

The prepared forms deliver the burn and not the flavour, and most of them are not this plant. Where wasabi is a background heat in a dressing the difference is small; where it is served alongside sashimi as the thing being tasted, the fresh rhizome is a different experience and the substitution is obvious.

Prepared wasabi paste

The tube. Usually horseradish, mustard, colouring and stabiliser, sometimes with a stated proportion of real wasabi. Shelf-stable, consistent, and a different product from the rhizome.

Not interchangeable with fresh

Not a substitute for the fresh rhizome where wasabi is the thing being tasted, and perfectly adequate where it is a heat source in a dressing or a mayonnaise. It is also not a measure of fresh wasabi: the tube is stronger by volume and carries salt and sugar the recipe has not accounted for.

Wasabi powder

Dried and milled, reconstituted with water to a paste. Composition varies as widely as the tubes do, and drying costs the volatiles, so most powders rely on mustard for their bite.

Flavour:

Sharper and drier than the paste, with a mustard character that becomes obvious once you know to look for it. Reconstituted it fades within the hour, closer to the fresh product in that respect than the tube is.

Flavour and aroma

Flavour:

A brief, intense nasal heat followed by a genuine sweetness and a green, almost herbaceous finish. The heat rises rather than spreads and is gone in seconds, which is precisely the opposite behaviour to chilli. Freshly grated it is noticeably sweeter and less coarse than horseradish; the tube product has the burn and not the sweetness.

Aroma:

Sharp, clean and vegetal, closer to fresh brassica leaf than to anything hot, with a sweetness underneath that survives only in the fresh grated rhizome. The volatile burn arrives as sensation rather than as smell.

Colour:

The fresh rhizome is pale green, deepening towards the crown, and grates to a soft green paste with visible texture. The uniform bright green of tube paste is added colouring; nothing about the plant produces it.

Heat

Pungency scale: isothiocyanate

In practice:

Sharp and nasal rather than hot on the tongue, and short-lived. It peaks within seconds and is largely gone within a minute, so it cannot accumulate across a meal the way capsaicin does.

The second is largely specific to wasabi and is part of why the fresh rhizome does not taste simply like a milder horseradish.

Recorded on the isothiocyanate scale rather than Scoville, and the distinction is not pedantry. Scoville measures capsaicinoids, which wasabi contains none of. Isothiocyanates are volatile, so they reach the nasal receptors and clear quickly; capsaicin is not volatile, binds to receptors in the mouth and persists. That is the whole difference between the two sensations, and it is why water helps with one and not the other.

The canonical use, and the mechanism is the opposite of what people assume. Wasabi is not covering the fish — raw tuna at sashimi grade has very little to cover — it is providing a brief sharp contrast against a dense, fatty, faintly metallic flesh, and then clearing completely so the next mouthful tastes of tuna again. Its volatility is the whole reason it works here where a persistent heat would not.

Beef

Strong

Rich beef fat coats the palate and wasabi cuts through it without adding the acidity that a mustard or a pickle would — useful precisely where the dish is already balanced and wants sharpness rather than sourness.

Horseradish

Good match

The substitution the market already made. Both are brassicas whose pungency is created enzymatically on grating, and both produce allyl isothiocyanate, so the sensation is genuinely the same one — sharp, nasal, gone within a minute. What horseradish lacks is the sweetness and the green note of the fresh wasabi rhizome, and it is coarser and more bitter underneath. It is also hotter by weight, so a spoon for a spoon overshoots.

Everything about using wasabi follows from one fact: the pungency is created by grating and destroyed by time and heat. Grate immediately before serving, grate only what will be eaten within a quarter of an hour, and never cook it — added to a hot sauce it contributes a faint cabbage note and nothing else. If it must go into something warm, it goes in off the heat at the very end. Do not stir it into soy sauce if you want to taste it, because the volatiles disperse into the liquid rather than into you. How to test it:

Grate a little and smell it. Fresh rhizome produces a sharp nasal hit within seconds and a green sweetness behind it; old rhizome smells faintly of cabbage and produces nothing. For powder, mix a pinch with cold water and wait two minutes — if there is no burn, the tin has taken up moisture and there is no fixing it.

Quality is not the same as safety

Everything on this list is a quality matter except the mould. A fresh rhizome is a moist vegetable rather than a dried spice, so it can genuinely spoil in a way that ground cumin cannot, and visible mould on it means discarding it rather than cutting around it. A powder that has lost its bite is disappointing and perfectly safe.

Buying and quality

Whole or ground:

The clearest whole-versus-processed case in the dataset, and also the one where the processed form is most defensible. Fresh rhizome is a genuinely different and better ingredient, and it is expensive, perishable and pointless unless it is being tasted directly. For sashimi it is worth the money and the trouble. For a wasabi mayonnaise, a dressing or a crust on a piece of beef, the tube is doing a job the rhizome would do no better and at forty times the cost — the sweetness and the green note that justify the fresh product are lost in any of those anyway. Buy the rhizome for the plate and the tube for the kitchen, and do not feel cheated by the second.

The thickened stem, grated. The leaves, flowers and petioles are also eaten in Japan and carry a milder version of the same pungency, but they are a vegetable rather than the seasoning.

The plant:

A slow-growing perennial of shaded mountain streambeds, producing a rosette of long-stalked heart-shaped leaves above a green rhizome that lengthens by a few centimetres a year. It takes between eighteen months and three years to reach a usable size, which is most of the explanation for the price.

  • Horseradish

    The same family and the same class of pungent compound, which is why horseradish stands in for wasabi convincingly enough to have taken over the market. It is coarser, hotter and lacks the sweet green note of the fresh rhizome, and it is what is in most tubes and sachets. Not an adulterant: a named ingredient sold under its own name in Japan as seiyō-wasabi.

  • Mustard seed

    The third brassica in the same mechanism, and a routine component of prepared wasabi paste alongside horseradish. Mustard contributes the same nasal burn from the same class of compound and none of the aroma.

  • Prepared wasabi paste and powder

Authenticity and adulteration:

The wrong word for what happens here, and using it is why the subject is so badly reported. Horseradish-and-mustard paste sold as "wasabi" is a substitution made in the open: the ingredients are declared, the substitute has its own established name in Japanese, and in Japan the label distinguishes hon-wasabi from seiyō-wasabi. What is fair to say is that the word "wasabi" alone, on a tube or a menu outside Japan, carries no information about which plant is in it. History and trade

Documented in Japan from at least the tenth century as a wild-gathered plant, and cultivated deliberately from the early Edo period, when terraced streambed growing was established in the Shizuoka valleys. Its association with raw fish is later and practical: it belongs to the same period as the emergence of nigiri sushi as street food in Edo, where a pungent condiment served an obvious purpose alongside fish held at ambient temperature. The plant never entered the spice trade, because it cannot be dried without losing what it is and does not survive shipping.

Trade:

Almost no historical trade to speak of, which makes wasabi unusual among the entries in this dataset. Every other pungent seasoning here travelled because it dries; wasabi does not, so it stayed where it grew until refrigerated air freight, and the global market that exists today is overwhelmingly a market in horseradish-based substitutes rather than in the plant.

Outside Japan

A genuinely different ingredient occupying the same place on the plate. What is served as wasabi in sushi restaurants across Europe, the Americas and much of Asia is generally the horseradish-and-mustard paste, and a great deal of what people believe about wasabi — that it is aggressively hot, that it is uniformly bright green, that it lasts in the fridge — is true of that product and not of the rhizome.
