Not interchangeable with powder

Quality is not the same as safety

Everything here is a quality or handling matter. Mastic is a dry resin with no water activity, it does not support microbial growth, and it does not become unsafe with age. The one genuine caution is not about storage: Pistacia lentiscus is in the cashew and pistachio family, so mastic is a consideration for anyone avoiding tree nuts — a property of the plant rather than of the jar.

Buy tears, without much hesitation. The plant:

An evergreen shrub or small tree of two to three metres, slow-growing and long-lived, cultivated in walled groves on the southern half of Chios. Trees begin producing usable resin at around five years and continue for decades.

Commonly confused with

  • Gum arabic

    A different resin entirely, from Acacia senegal, used as a thickener and emulsifier with essentially no flavour. The shared English word "gum" is the whole of the connection, and substituting one for the other gives either no aroma or no thickening depending on the direction.

  • Mahleb

    A standing partner rather than an alternative, and the two are constantly confused because they appear in the same Greek and Levantine festival breads. Mahleb is a cherry kernel, almond-like and bitter; mastic is a resin, piney and chewy. A tsoureki wants both, doing different jobs.

  • Frankincense and other aromatic resins

    Visually near-identical as pale tears and not culinary. Frankincense is burned rather than eaten, and the resemblance has led to genuine substitution errors in shops that sell both.

Where it comes from and how it is made

Origin:

Chios, in the eastern Aegean, and specifically the twenty-four Mastichochoria — the mastic villages of the southern half of the island. The tree grows across the Mediterranean and yields commercially useful resin essentially only here.

Why only there is genuinely unsettled: the local variety, the microclimate, the soil and centuries of selection are all implicated, and repeated attempts to establish the crop elsewhere have failed.

History and trade

One of the longest continuously traded commodities in this dataset, and one of the few whose production has never successfully moved. Mastic from Chios is documented in classical Greek and Roman sources, was a monopoly of the Byzantine emperors and then of the Genoese, and under Ottoman rule the mastic villages held privileges — reduced taxes and a degree of autonomy — in exchange for the crop, which was reserved for the imperial harem and court. The villages built for that trade still stand, and the growers' cooperative founded in 1938 still controls it. Attempts to establish production elsewhere in the Mediterranean have repeatedly failed.

A controlled trade for most of a millennium, and still a cooperative one. Chios mastiha carries a protected designation of origin, and the growers' association handles collection, grading and sale — which makes this one of very few spices here where provenance on a label is legally meaningful rather than a claim.
