Gobi in most of its forms. Cauliflower is bland and structurally open, so it absorbs a bloomed spice mixture better than a dense vegetable does, and cumin is the base note of nearly every version.

Strong

Cauliflower browns to something nutty and faintly sulphurous, and coriander seed's citric lift is the cleanest counter to the sulphur. It works where a heavier spice would simply pile on top.
