Tosign vs Thyme

The short answer

Both are thymes and they are different species. Thyme in a European kitchen is Thymus vulgaris, a garden plant. Tosign is the leaf of two wild thymes of the Ethiopian highlands, Thymus schimperi and Thymus serrulatus, sold dried in Ethiopian markets, and two Ethiopian market surveys label it with the garden species’ name. The one tosign oil whose analysis was read was led by carvacrol, the phenol of oregano, with thymol second.

Thyme

Dried leaf, and it is one of the few herbs where the dried product needs no apology. Ground thyme brings the bitterness forward and loses the woody top notes within months. Fresh thyme is worth buying when you want the greener, more lemony version or when you want to fish a sprig out afterwards — but for a stock, a braise or a rub, dried leaf is doing the same job and keeping better.
