Ishpingo vs Cinnamon (Ceylon)
The short answer
Sold under the same Spanish word and not the same thing. Cinnamon is the bark of Cinnamomum; ishpingo is the woody flower cup of an Amazonian laurel. Both owe their warmth to cinnamaldehyde, but ishpingo carries as much methyl cinnamate again, which makes it sweeter, fruitier and faintly balsamic. For colada morada ishpingo is the traditional spice; cinnamon gives the drink its outline and misses the perfume.

| Ishpingo | Cinnamon (Ceylon) | |
|---|---|---|
| Botanical identity | Mespilodaphne quixos (Lam.) Rohwer | Cinnamomum verum J.Presl |
| Part used | flower | bark |
| Origin | The Amazonian lowlands and eastern Andean foothills of Ecuador, Colombia and Peru. | Sri Lanka, where it grows natively and where commercial production is concentrated. |
| Flavour notes | cinnamon, sweet, balsamic, fruity, warm | sweet, floral, citrus, delicate, warm |
| Heat | Scoville does not apply | Scoville does not apply |
| Flavour | Warm and sweet like cinnamon, rounder and less sharp. | Sweet and mild with little astringency, and a lingering finish. It does not have the punchy, almost hot bite of cassia, which is exactly why it suits delicate applications and disappoints anyone expecting a cinnamon bun. |
| Aroma | Cinnamon-like and sweet, with a fruity, balsamic note that cinnamon lacks. | Delicate, sweet and complex, with citrus and floral lift over the familiar warm-sweet base. Where cassia announces itself, Ceylon cinnamon unfolds. |
Can you swap them?
Substitution is directional: the answer is often different in each direction, and both are recorded.
Cinnamon (Ceylon)
Good matchThe shared cinnamaldehyde carries the warmth; the methyl cinnamate that makes ishpingo sweeter and fruitier is missing. A colada morada made with cinnamon alone is correct in outline and a little plainer.

Works for
- Colada morada and spiced drinks made outside Ecuador
Does not work for
- Where the balsamic, fruity note of ishpingo is wanted
Which should you buy?
Ishpingo
Whole, for infusing and straining out, which is how the spice is used.
Cinnamon (Ceylon)
Buy quills if you want to know what you are getting. The layered structure of a Ceylon quill is visible and hard to fake, whereas ground "cinnamon" is routinely cassia and you cannot tell by looking. Ceylon quills are also brittle enough to grind at home, which is not true of cassia bark.
