Spice adulteration: what it is and what you can actually detect
What is spice adulteration and how would I know?
Quick answer
Adulteration is the deliberate addition or substitution of something cheaper into a spice, or a false claim about what the spice is or where it came from. It is distinct from contamination, which is unintended, and from ordinary agricultural variation, which is neither. The uncomfortable part of the honest answer is that most adulteration is not detectable at home: the techniques that matter are laboratory ones, and the widely shared kitchen tests either detect only the crudest cases or detect nothing at all while appearing to work.
Adulteration, contamination and variation are three different things
Adulteration is intentional. Someone adds bulk, colour or a cheaper species to a spice, or labels it as something it is not, in order to make money. It is a fraud problem.
Contamination is unintentional. Heavy metals from soil, mycotoxins from poor drying and storage, pesticide residue and microbial load all arrive without anyone deciding they should. It is a food-safety and supply-chain problem, governed by different regulation and detected by different tests.
Ordinary variation is neither. Two lots of paprika from different seasons will differ in colour and heat; a wild-gathered crop varies more than a cultivated one; a landrace group like the chillies behind Aleppo pepper has no single defined composition. Variation is what agriculture looks like and calling it adulteration is a category error that makes the real problem harder to talk about.
The distinction matters practically because the three have different remedies. Fraud is addressed by traceability and testing; contamination by better drying, storage and limits; variation by understanding what you bought.

The forms it takes
Bulking and dilution is the commonest. Ground spice is extended with something cheap and visually similar — starch, flour, bran, ground shell, husk, sawdust, spent material from which the oil has already been extracted. Spent spice is particularly insidious because it looks entirely normal: the colour and the particle size are right and only the aroma is missing.
Species substitution replaces an expensive species with a cheaper relative. Cassia sold as Ceylon cinnamon is the most widespread example and is legal in many markets because both are legitimately called cinnamon there. Cheaper Ferula gums have been substituted for asafoetida; ordinary cumin, caraway and nigella all circulate as black cumin; safflower and turmeric-dyed fibres have been sold as saffron.
Undeclared colouring restores or fakes an appearance that the trade has taught buyers to expect. Unauthorised dyes in ground chilli and turmeric have been the subject of regulatory action in several jurisdictions, and lead chromate contamination of turmeric — added for colour — is documented as a public-health problem rather than merely a commercial one.
Geographic and authenticity claims are the subtlest form. A blend sold as Aleppo pepper is now most often Turkish; herbes de Provence need contain no herb grown in Provence. Neither is necessarily fraud, and both are claims a buyer might reasonably think they were paying for.

Where the documented risk concentrates
Risk follows price and grindability. A spice that is expensive per gram, sold ground, and hard to identify once milled is the ideal target; a cheap whole seed that anyone can recognise is not worth faking.
Saffron sits at the top of that list by a wide margin and has been adulterated for centuries — with safflower, with dyed maize silk, with turmeric, and by weight-loading with moisture or oil. Ground turmeric, ground chilli and ground black pepper are high-volume targets where colouring and bulking are both documented. Black cumin is heavily substituted by name rather than by dilution, because three unrelated seeds share the English term and differ several-fold in price. Asafoetida is a special case: compounding with flour is standard and legitimate practice, so the question is proportion rather than presence, and resin content is almost never declared.
Vanilla, cardamom and mace are expensive enough to attract attention. Whole spices in general are far safer than ground ones, which is the single most useful thing this section can tell you.

How it is actually detected
Real detection is analytical. Laboratories use chromatography and mass spectrometry to profile volatile compounds and detect the wrong species or a missing oil fraction; spectroscopic methods including near-infrared and Raman screen for bulking agents; DNA barcoding identifies species in ground material where morphology is gone; and isotope-ratio analysis can address some origin claims. Industry standards specify parameters such as volatile oil content, ash and acid-insoluble ash, and moisture, and a lot that fails those is flagged long before anyone tastes it.

The limits of home testing
Several home tests circulate widely and are worth being specific about. The water test for turmeric — drop powder into water and look for colour streaming or residue — reflects solubility and settling behaviour that varies with grind and with the water, and it does not distinguish an added dye from ordinary curcumin. The saffron water test, in which real saffron is said to release colour slowly while dyed material bleeds instantly, catches only the crudest fakes and is confounded by the fact that genuine saffron releases colour readily in warm water. Rubbing chilli powder in the palm to look for colour transfer detects some added dyes and misses others entirely. Burning or floating tests for various spices have no established basis.
The honest position is that visual and kitchen-chemistry inspection reliably detects only unsophisticated adulteration, and that anyone adulterating at commercial scale is doing so in ways designed to survive exactly these checks. Publishing them as though they were tests would be worse than saying nothing, because it would leave a reader more confident and no better informed.
What visual inspection can genuinely do is narrower and still useful. It can tell whole spices from ground ones. It can spot obvious foreign matter, stalk and dust. It can identify a species where the morphology is intact — black cumin beside ordinary cumin, or a Ceylon quill beside a cassia scroll, are unmistakable once you have seen both. And smell detects spent material well, because the one thing extraction removes is exactly what you are smelling for.

What this means for buying
Buy whole where the spice is usable whole. It is the single most effective defence available to a domestic buyer, because morphology survives and dilution does not hide in it. Grind what you need.
Buy from sellers with high turnover, which in most Western cities means a South Asian, Middle Eastern or East Asian grocer rather than a supermarket. Higher turnover means fresher stock and, for the spices those shops specialise in, buyers who would notice.
Treat an unusually low price on an expensive spice as information. Saffron below a plausible floor is not a bargain; it is a different product.
Smell before committing an expensive spice to a dish. Spent material passes every visual check and fails the first sniff.
And be wary of the reverse failure: assuming variation is fraud. A duller paprika, a milder chilli or a paler turmeric may simply be a different season, a different cultivar or an older jar.
